The Most Flavorful Chicken Noodle Soup

This recipe is adapted from the New York Times' Easiest Chicken Noodle Soup -- easy, flavorful, and full of immune supporting ingredients.


The ground chicken absorbs the flavors and retains moisture.  The bone broth supports gut health, while the vitamin C from the lemon juice supports the immune system.  Use coriander seeds and coarsely grind them with a mortar and pestle and take your soup to a whole other level of flavor that commercially ground coriander won't offer.

I've never had great results with one pan recipes that require the noodles to boil in the pot with the rest of the ingredients, but this one is actually a must.  With 8 cups of bone broth, you'll still have a soup when the noodles finish cooking (instead of a starchy mush).  The noodles will soak up the flavor of the soup (which is why you want to season with salt before you add the noodles).

Even better than all of the above?  It cooks up in about 30 minutes.

Ingredients

  • 5 Tbsp olive oil
  • 1 lb ground chicken
  • Salt & pepper
  • 4 garlic cloves, roughly chopped
  • 2 tsp coriander seeds, ground*
  • 2 celery stalks, diced
  • 1/2 cup matchstix carrots
  • 1 large shallot, finely chopped
  • 1 Tblsp fresh thyme (or 1 tsp dried)
  • 8 cups unsalted bone broth
  • 8 ounces cavatelli pasta
  • 1/2 c lemon juice
  • 2 Tbsp. fresh dill


Directions.

  1. In a large pot, heat 3 Tbs oil over medium-high heat.  Add the chicken, season with 1 tsp salt, and pepper to taste, and cook, breaking meat up until starting to crumble (about 3 minutes).
  2. Add the garlic and coriander, and cook, stirring frequently until chicken is cooked through.  Transfer chicken to a small lidded bowl (to retain moisture).  Cover and set aside.
  3. Add 2 Tbsp oil, celery, carrot, shallot, and thyme to the pot, and season with 1/2 tsp salt, and pepper to taste.  Cook about 5 minutes.
  4. Add bone broth and bring to a boil over high.
  5. Add1 tsp salt, and noodles and cook over medium high until al-dente according to package directions.
  6. Add the reserved chicken and any juices.
  7. Add lemon juice and fresh dill.  
  8. Check to see if additional salt or pepper is needed.

Serves 4-6.
